Essentials Programme

 

Ecole Ducasse Abu Dhabi Studio

The Essentials Programme covers all the critical areas of French pastry, including French Pastry Arts Fundamental Techniques, Chocolate and Entremets, and Restaurant Desserts.

You’ll learn the core techniques of French pastry, from mixing and baking to decoration, and delve into the art of chocolate work while perfecting your creations of rich, elegant entremets.

Additionally, you’ll gain the knowledge to create sophisticated desserts suited for fine dining experiences.

Upon completion of this programme, you’ll be prepared to step into a variety of career roles within the pastry arts industry.

You can become an entrepreneur and start your own pastry business, whether it’s a cafe or a boutique pastry shop, or work as a pastry chef at renowned restaurants, hotels, or bakeries.

The programme also opens the door to a career as a pastry designer, combining creativity and technique to design exquisite pastry creations.

Other career paths include working as a lab production specialist in a production environment focused on mass-producing high-quality pastry items or as a caterer, specializing in crafting pastry delights for events and private functions.

This programme is ideal for individuals who are career changers seeking a fresh start in a dynamic industry, aspiring entrepreneurs aiming to open a pastry-focused business, or pastry arts enthusiasts looking to take their skills to the next level.

With a maximum of 12 students per class, the programme ensures personalised attention and ample opportunity for hands-on practice.

Over 90 per cent of the programme focuses on practical workshops, giving you valuable real-world experience.

 

The programme

 

The programme is taught by highly qualified chefs with expertise in each pastry discipline, promoting a personalised learning experience that encourages strong team cohesion.

To help you get started, all necessary tools and chef uniforms are provided, allowing you to focus on your craft without worrying about extra costs.

The programme is taught in fully equipped labs at École Ducasse Abu Dhabi Studio, where you’ll engage with the Alain Ducasse philosophy of French cuisine, benefiting from an immersive learning environment.

Candidates interested in joining the programme must meet a few requirements, including being at least 18 years old and having a B1 level of English (equivalent to an IELTS score of 4.5) for English sessions.

No previous experience is required, making this programme accessible to both beginners and those with some experience in the field.

Weekend Programme

26, April to 30, November, 2025

Saturdays and Sundays

8 am to 1 pm (three weekends per month)

There will be an Open Day on 9 April to promote the programme. The admission process involves a written application, followed by an interview. To secure your spot, a registration fee of AED 1,000 is required.
