His passion for cooking was ignited in his native Syria, where his mother, his greatest teacher, instilled a love for fresh, local produce and traditional techniques.

Chef Saleh honours his mother’s legacy by incorporating innovative techniques and contemporary influences into his dishes. This philosophy of balancing the old and the new is evident in every offering at Mijana. The restaurant’s name, derived from poetic Lebanese folk songs, sets the stage for an immersive experience complete with live music, shisha, and traditional tea.

A pivotal moment in Chef Pham’s career was mastering the art of preparing duck in a traditional wood-fired oven during his time in Beijing. This technique continues to influence his cooking today, evident in the symphony of spices and Asian-inspired stir-frying, steaming, and boiling techniques showcased in his menu.

Chef Pham prioritises consistency and high standards across his entire menu. He emphasises proper hygiene, adherence to established recipes, and strict adherence to Standard Operating Procedures (SOPs). Sustainability is a core value, with fresh, organic ingredients, including those grown vertically within the restaurant being incorporated whenever possible.

His dream is to secure a coveted Michelin Star for Li Jiang. Beyond this, he aspires to bridge the generational gap by passing on the time-honoured traditions of Vietnamese cuisine to future generations.
