Rocket Salad with aged Emirati cheese and locally-grown figs – a refreshing and earthy start.
Emirati Majboos Risotto paired with grilled spiced chicken – a comforting fusion of classic Gulf flavors and Italian technique.
Novikov’s Signature Pizza topped with Qasheed fish and black lime – a bold reinterpretation of a beloved favorite.

At the heart of this collaboration is Chef Muna Al Mansoori, a trailblazer in the Emirati culinary scene.
As the first internationally certified Emirati chef, she has garnered acclaim both locally and globally.
With multiple gold medals from international culinary competitions and a résumé that includes experience in Michelin-starred kitchens, Chef Muna currently leads as Executive Chef at Fairmont Bab Al Bahr.
