The new (chef, menu) at Verso is one you simply cannot miss

There’s a new chef on the block, and the new menu is every bit as decadent as one might’ve thought!

If the food wasn’t great enough already, it’s now got a brilliant new makeover courtesy of Verso’s new chef, Chef Mattia Chiai.

Hailing from the enchanting island of Sardinia, Italy, Chef Mattia’s love affair with gastronomy sparked at an early age in the best place of all – his grandmother’s kitchen. Now, he brings her wisdom and techniques to the table in Abu Dhabi.

He has since pursued his dreams through cooking schools and Michelin-starred restaurants in Italy, honing his craft and perfecting his skills to become one of the most sought-after chefs of our time.

“I am thrilled to join the team at Verso and bring my unique approach to Italian cuisine to Abu Dhabi,” says Mattia Chiai. “My goal is to transport diners on a culinary journey that combines tradition and innovation, using the freshest ingredients and the most imaginative techniques. I am excited to share my home-cooked style with our guests and contribute to this already exceptional dining experience.”

So what can guests expect? From handmade pasta and freshly baked bread to tantalising seafood and perfectly grilled meats, it’s got all the bold and classy flavours of great food with the hearty comfort of being at home in Italy.

Our favourites included the Insalata Caprese Treccia di Bufala, with Buffalo Braided Mozzarella, Datterino Tomatoes, Basil, Oregano and Olive Oil.

The Insalata di Mare Genovese is too deliciously unique to miss out, featuring the best Sautéed Octopus, Mussels, Clams, Prawns, Potatoes, Lemon, Basil and Green Beans.

When it comes to the mains, we’d highly recommend the Tortelli Caprese, which is a Stuffed Pasta with Tomato, Mozzarella, Basil, Balsamic Glaze and Pesto. And for the second main, if you aren’t stuffed already at this point, you absolutely cannot skip the Guancia di Manzo. The Slow Cooked Australian Black Angus Beef Cheek with Soft Polenta is delightful.

End on a sweet note with the Ricotta e Pere, which is a Ricotta Cheese Tart with Pears and Custard, and you’re golden.
