Cyan Brasserie unveils spectacular new menu in the iconic leaning tower of Abu Dhabi at Andaz Capital Gate Abu Dhabi

The reimagined menu is a testament to the innovation and creativity of Cyan Brasserie’s culinary team, headed by Executive Chef Royston Savio Vaz. “Growing up in Kuwait and Goa, I was always surrounded by such immense culture, a large part of it being food that I often let my curiosity get the better of me by trying new things and getting involved with the wonderfully talented family members sharing their delicious recipes and preparations at the table. Somewhere, deep down I always knew I’d end up in the culinary field. Throughout my culinary journey, I’ve had the privilege of traversing various countries, immersing myself in their local flavors and culinary traditions. This unique experience has allowed me to infuse international influences into my creations, resulting in a rich and diverse culinary repertoire,” said Chef Royston. We’ve carefully crafted each dish to embody a sense of elegance and sophistication, matching the luxurious ambiance and the locally inspired sensory immersion of Andaz,” he added.
Guests can anticipate a blend of culinary traditions with a contemporary twist, featuring the best of French and Arabic cuisine through dishes such as compressed melon with goat buttermilk, pinenuts, frisee, pickled radishes; mushroom tart with gruyere crème, shaved black truffle; and Jordanian mansaf featuring lamb shank, jameed, turmeric rice, and fried almonds.
Andaz Atypical signifies flavours across the globe with dishes such as seared scallops featuring curried coconut sauce, pomegranate, bok choy Desserts; vegan coconut panna cotta which includes almond crumble, mango-passion salsa and chocolate pot du crème featuring coffee maple honeycomb, candied ginger and applewood smoke.
