Yalla – Abu Dhabi Life catches up with Chef Simone De Vivo at the popular Italian restaurant Sole, at Conrad Abu Dhabi Etihad Towers.

We put Chef Simone, the chef de cuisine at the Conrad Abu Dhabi at Etihad Towers, to the test with our quick-fire questions that reveal his likes and dislikes.

What’s your preference, sweet or savoury?

Sweet!

What would you rather be served, soup or salad?

Soup, because there’s more technique and flavour behind it.

What part of the meal do you prefer, starter, main or desserts?

You can say starters, because first impressions last.

Breakfast or dinner time?

Dinner. I like to dine and not just to feed myself. At night time you dine; in the morning I just end up feeding myself.

Your favourite cuisine?

Italian, of course.

Your favourite kitchen gadget.

A simple spoon, because it’s so versatile. It’s small to handle and the best tool to use to plate, despite all the tongues and all those things.

What’s a culinary trend you wished would end?

I believe that cooking is so versatile that it would be such a shame to see one trend actually stop.

What’s the strangest thing you have served?

‘Mannish Water’, a spicy Caribbean soup made from goat intestines and other parts of a goat’s anatomy.
